Any leftover cordial for brunch beverages, puddings, or for another batch of this cocktail.

Bikini Recipe

Makes enough for 10 servings

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

For the Citrus Syrup: Put all the ingredients in a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, remove from the stove and leave to cool down entirely. Decant to a clean bottle, seal and refrigerate it in the fridge, it can be stored for up to one month.

Preparing the Premix: Combine all the liquids into a big jug, allow it to infuse for 60 minutes, then pass it through preferably using muslin, so it's perfectly clear.

To serve: Pour 85ml of your cocktail base into your stirring glass packed with ice, gently stirring lightly for one minute to cool it down. Pour into a frosted cocktail glass or similar, garnish with some cranberries adding the final touch with a brief mist of the essential oil over the drink.
